
Blackcurrant Kissel
Description
The drink is quick and easy to prepare. Here is a simple recipe for blackcurrant kissel. Mash the berries and strain them through a sieve. Set the resulting puree aside. Boil the leftover pulp with water and sugar, then simmer for another 5 minutes. Cool, strain again, and return the liquid to the saucepan. Bring to a boil once more, then gradually pour in starch diluted with water. Stir well and cook for another 3–4 minutes, then add the reserved berry puree at the end. Remove the kissel from heat and pour into cups. Serve chilled. Enjoy!

Mash the berries with a wooden spoon and strain through a sieve.

Set the puree aside. Transfer the pulp to a saucepan, pour in water, and add sugar. Bring to a boil and simmer over low heat for another 5 minutes. Remove from heat and cool.

Strain the compote and return it to the saucepan.

Put the starch into a bowl and pour 0.5 cup of cold water over it. Mix until completely dissolved.

Bring the pot of compote to a boil, then slowly pour in the starch in a thin stream. Mix thoroughly.
