Description
Making raspberry kissel is not difficult; the hardest part is achieving the right thickness. If you follow this photo recipe precisely, your kissel will have the perfect consistency. I personally prefer raspberry kissel chilled, although some enjoy it slightly warm. Either way, during raspberry season, this kissel is an indispensable remedy for thirst and a very delicious drink.

First, you need to rub the raspberries through a sieve so that there are no seeds.

Then add one cup of sugar to the water, place it over heat, and bring to a boil.

Take half a cup of cold water and dissolve the potato starch in it. If you use hot water, the starch will clump, so use only cold water.

Add the dissolved starch and mashed raspberries to the boiling sugar syrup.

Boil for another 3-5 minutes until thickened. That's it, the kissel is ready—it can be served either cooled or warm.
