
Red currant jelly
Description
Red currant kissel is a truly traditional Russian drink and dessert. Similar kissels made from this berry have been prepared in Russia since ancient times. Today, during the season of this berry, it would be a sin not to make red currant kissel at least once—although I'm sure that after making it just once, you'll want to make it again and again. The drink is ready to serve.

Step 1

First, rub the washed red currant berries through a sieve, removing any debris. Squeeze the juice out of the berries.

Place the remaining pulp in a saucepan, pour in water (about one and a half liters), bring to a boil, simmer for another 10 minutes, then remove from heat.

Strain, add sugar and a little lemon juice, return to heat, bring to a boil and cook until the sugar has completely dissolved.

Dissolve the starch in the remaining juice from the red currant after the first step.

Pour the juice mixed with starch into the boiling sugar syrup, stir, bring to a boil once more, then remove from heat. Let it cool slightly — and it's ready to serve.
