
Blueberry Kissel
Description
The drink is quick and easy to prepare. Delicious blueberry kissel can even be served for breakfast; it strengthens the immune system and improves digestion. You can use any starch—corn or potato—but it must be dissolved only in cold water, otherwise you'll end up with lumpy kissel. Serve chilled.

Prepare the listed ingredients.

Rinse the blueberries in water, place them in a saucepan or pot, add granulated sugar, and pour in the lemon juice.

Pour in 700 ml of water, reserving 100 ml of cold water to dissolve the starch in it. Place the container on the stove and bring the contents to a boil, then simmer for about 10-12 minutes.

Dissolve the starch in cold water. It must be cold, as warm or hot water will cause it to form lumps. For the same reason, starch is not added to boiling compote!

Reduce the heat to the lowest setting and pour the water with starch into the saucepan, immediately stirring everything. Simmer for about 1-2 minutes, bringing it just to a boil. Do not let the drink boil under any circumstances, otherwise it will not thicken. Turn off the heat and let the kissel cool slightly.
