
Black currant jelly
Description
The drink is quick and easy to prepare. To make black currant kissel, follow these steps. First, sort through the berries and rinse them thoroughly. Extract the juice from the berries and set it aside in the refrigerator. Pour hot water over the remaining berry pulp and simmer for 6–7 minutes. Strain the mixture, reserving a small amount of the liquid to dissolve the starch. Add sugar to the remaining liquid, bring to a boil, and cook until the sugar dissolves completely. As soon as the sugar dissolves, add the starch diluted in the reserved liquid, bring to a boil again, then immediately remove from heat. Stir in the juice you set aside earlier and mix well. The kissel is essentially ready—pour into serving dishes and serve. If you don't like the film that often forms on the surface, simply sprinkle the kissel with sugar. Serve with whipped cream or ice cream, as shown in the photo.
