
Quince jelly
Description
Quince kissel turns out to be a moderately sweet and delicate drink. You can adjust the sweetness to your taste. To achieve a "velvety" texture, be sure to strain the puree through a fine sieve.

Prepare the necessary ingredients.

Thoroughly wash the quince, remove the "fuzzy" coating using a metal brush. Remove the seed core and cut into small, irregular pieces.

Transfer the quince to a saucepan or skillet, pour 800 ml of cold water over it. Place over heat. Bring to a boil and simmer, covered, for 25 minutes.

After the time has elapsed, remove the quince from the heat. Take the fruit out of the syrup and place it in a bowl. Puree the quince with an immersion blender.

The resulting puree should be smooth and uniform.

Pass the purée through a sieve into the cooking liquid in which the quince was boiled.

To the broth with mashed puree, add sugar and citric acid. Mix until smooth. Place over heat and warm over medium heat until boiling.

Pour starch into a glass of cold water and stir.

As soon as the broth begins to boil, reduce the heat and slowly pour in the diluted starch in a thin stream. Stir and cook until it comes to a boil, but do not let it boil.
