
Quinoa with vegetables
Description
The dish is prepared without unnecessary complications. Quinoa and legumes are very rich in protein, yet they are not too high in calories. They go well together, especially with vegetables. When cooking quinoa with vegetables, I recommend adding sun-dried tomatoes—they give a truly wonderful aroma. However, you can also use just aromatic spices, such as herbs de Provence. The finished dish is ready to serve.

Soak the beans for about 8 hours (or preferably overnight), then boil until tender. Pour boiling water over the quinoa in a 1:2 ratio and cook for about 15 minutes. Fluff the cooked quinoa with a fork.

While the quinoa is cooking, you can sauté the vegetables: dice the onion, grate the carrot, and chop the celery into small pieces. Sauté the vegetables in olive oil until golden.

Then add the cooked beans and quinoa to the vegetables. Mix and add the chopped sun-dried tomatoes.

Stir everything, season with salt and pepper to taste, and cook over medium heat for another 5 minutes.

Cooked quinoa with vegetables can serve as an excellent side dish for light meat dishes.
