Homemade Kinder Pingui

Description

The recipe won’t take much time. Unlike the store-bought version, homemade Kinder Pingui turns out much more delicate. The cream should not be too cold. Of course it will take longer to whip, but the gelatin won’t seize when mixed and won’t turn grainy or flaky. If the cream won’t whip well, add a special whipping stabilizer. Baking is done. Serve at the table.

    Prepare all the ingredients you need to make Kinder Pingui at home.

    Separate the egg whites and yolks. Put the egg whites in the refrigerator; you will need them later. Place the yolks in a bowl, add honey, half the sugar, vanilla, and one tablespoon of room-temperature water.

    Beat everything with a mixer on high speed for 5 minutes.

    Beat the egg whites with the remaining sugar until stiff peaks form. Fold the beaten egg whites into the egg yolk mixture and mix gently.

    Mix the flour with the cocoa and sift into the bowl with the egg mixture.

    Carefully mix until the dough is smooth and uniform.

    Line a baking sheet with parchment paper or a silicone mat. Transfer the dough and spread it evenly.

    Bake the sponge cake in a hot oven for 10–13 minutes at 180°C. Take it out and cool completely. Peel the sponge off the paper and cut it in half.

    In a bowl, add the gelatin and pour cold boiled water over it. Leave for 30–40 minutes to soften and swell, or follow the instructions on the gelatin package.

    Pour off 30 milliliters of cream and heat gently, but do not boil. Pour the hot cream into the bloomed gelatin and stir until smooth.

    Pour condensed milk into a bowl and add gelatin dissolved in cream; stir to combine.

    Whip the cream until fluffy and, while continuing to whip, pour in the gelatin mixture. Whip until fluffy and it begins to hold its shape well.

    Cut identical rectangles from both halves of the sponge cake. I used a special rectangular ring mold without a bottom. On a board of the right size, place plastic wrap or parchment paper, set the mold in place, and lay down one sponge layer.

    Spread the whipped cream onto the sponge cake and smooth it out.

    Place the second sponge layer on top and press gently. Refrigerate for 2–3 hours until set.

    After it has set, remove from the mold and cut into pieces.
