
Broccoli Kimchi

Prepare all ingredients.

Wash the broccoli and separate into florets. Large florets can be cut in half.

Dissolve the salt in water and soak the broccoli in it for 12–15 hours. Then drain the water, rinse the broccoli thoroughly, and let it drain.

Prepare the base for the dressing. Bring water to a boil in a saucepan and add rice flour, whisking until no lumps remain. When the liquid begins to thicken, remove from the heat and let cool.

Pour the cooled dressing base into a bowl. Add the Chinese pear, peeled and grated on a fine grater, finely chopped white parts of green onion, gochugaru pepper, minced garlic and ginger root, miso paste, and fish sauce. Mix everything together.

Transfer the broccoli to a large deep bowl and add the green onions cut into matchsticks.

Add the dressing and carefully mix everything so that it is evenly distributed over the broccoli.

Pack the resulting mixture tightly into a food container or jar and cover with a lid. Leave at room temperature for 3 days to ferment. Then refrigerate for storage.
