
Kimadopita
Description
The recipe won't take much time. There are many recipes for this hearty pie – classic cheese kimadopita, appetizing one with chicken and feta, original with eggplant and pork, there's even a spinach pie with feta cheese and many more variations. Of course, only Greeks know, Serve it warm or chilled. Perfect with tea.

Mix the flour with salt, water and olive oil, add a little dry yeast, knead a firm dough. Let the dough rest a bit, about 20 minutes.

While the dough rests, work on the filling. Dice the tomatoes and garlic. Finely chop the herbs.

Add the sliced vegetables, herbs and cheese to the minced meat, pour in tomato juice. Salt, add spices and mix everything well.

The dough has already rested a bit, it's time to move on to the next stage. Divide the dough into several parts, I got 8, roll them out into thin sheets.

Brush each layer with butter, stack them all together, and roll out thinly again.

Divide the dough into two parts, roll out the first part thinly. It is advisable to place it directly onto a parchment-lined baking sheet.

Spread the ground meat evenly over the entire surface.

Cover the pie with the second portion of dough, previously rolled out thinly. The dough is very easy to transfer from the work surface using a rolling pin. Pinch the edges together.

Brush the pie with olive oil, sprinkle with sesame seeds, and bake in a preheated 180°C oven for 30–35 minutes.
