Prepare the ingredients.

Sift the flour into a mixing bowl, add salt and sugar, and mix.

Add the cold butter cut into pieces and rub it into crumbs with the flour.

Add the eggs, sour cream, and replace the dough.

Do not knead the dough for a long time, so the butter doesn't melt and the gluten doesn't develop. The pastries should be crumbly. Transfer the dough to a bag and refrigerate for 30 minutes.

Dice the onion and meat into small pieces—actually dice them, don’t grind them in a meat grinder; the flavor of the pies depends on this. Salt, pepper, add a couple of tablespoons of ice water, mix well, as if beating the meat.
