Description

The recipe won't take much time. It's quite an interesting dish, something in between kofta and meatballs. It looks very appealing. If you're afraid the breading might become dry, pour a little water onto the foil and cover it from the top. But usually, this doesn't happen. You can use any ground meat you prefer, the main thing is that it shouldn't be too fatty. Serve hot.

    Prepare all the necessary ingredients for making kibbeh. Soak the skewers in cold water.

    Rinse the bulgur and pour boiling water over it. Cover with a lid and let it sit for 15 minutes.

    Place over medium heat and cook until the water has evaporated. This will take approximately 10–15 minutes. Remove from heat and let cool.

    Place the minced meat in a bowl. Peel the onion and finely chop it, then add it to the minced meat.

    Add paprika, salt, and black pepper to the minced meat. Mix thoroughly.

    Divide the bulgur into 3 parts. Add two parts to the minced meat and mix thoroughly.

    Wash the cilantro and finely chop it. Peel the garlic and grate on a fine grater. Add the herbs and garlic to the prepared meat mixture and mix well.

    Divide the resulting mixture into 12 equal parts. Shape them into meatballs and roll each one in the reserved bulgur.

    Line the oven rack with foil and grease it with vegetable oil. Thread three meatballs onto each skewer and place them on the foil.

    Bake in a preheated oven at 180 degrees for 45 minutes.

    For the sauce, add grated cucumber and one garlic clove, mint, and mix. Season with salt to taste.
