    Take the ingredients listed for making keto zucchini waffles. Choose young zucchini with firm skin. I got one zucchini for the weight indicated.

    Wash the zucchini and pat dry. On the coarse side of a grater, grate the zucchini into a deep bowl. Salt and set aside for 5–10 minutes until the zucchini releases its juice.

    Squeeze the zucchini to remove the liquid, then put it back in the bowl.
