
Keto waffles
Description
Keto waffles can be served for breakfast, a snack, or dessert with chocolate topping, various syrups, jams, and creams. Especially delicious with fresh berries or fruit. Don't forget aromatic tea and coffee. Serve them warm or chilled. Perfect with tea.

Prepare the listed ingredients. If you have a large family, increase the ingredient amounts.

Crack the chicken egg into the bowl of a kitchen processor or into a deep container if you will be whisking with a mixer. Add granulated sugar and salt. Whisk for 3‑4 minutes until it becomes pale.

Pour high-quality olive oil into the mixture, which you may optionally replace with melted butter.

Stir and add the baking soda neutralized with vinegar. Instead of soda, you may use 0.5 tsp of baking powder.

Add the flour and knead a stiff dough. It should look like a stretchy caramel. If the dough is more liquid, it will come out of the waffle iron!

Preheat the waffle iron thoroughly and grease its plates with butter the first time. Spoon about 1.5 tbsp of batter onto the center and press down. Bake for about 2–3 minutes depending on the power of your waffle iron. You can also bake waffles in a Soviet‑style waffle iron — don’t forget to grease its plates!

Serve the ready keto waffles at the table. While hot they will be soft, but once they cool they become crispy and crumbly. Don’t forget the chocolate topping, jam, or cream.
