
Homemade ketchup

1. Wash and dry the tomatoes. Remove the stems, cut into small pieces, and place in a saucepan or multicooker bowl. Add peeled and slightly minced garlic, ginger, and chili. Add the rinsed raisins.

2. Pour in the vinegar, add half of the sugar. Simmer the tomatoes over medium heat until soft, about half an hour. Then blend everything into a puree using a blender.

3. Now, pass the resulting puree through a sieve to remove any lumps. Then place it back on the heat, add the remaining sugar and salt. Cook over medium heat for about 30-45 minutes, until thickened. The exact time depends on the juiciness of the tomatoes.

4. Check the readiness of the ketchup by dropping a small amount onto a plate. If it doesn't spread, it's ready.

5. Transfer the homemade ketchup into a previously sterilized jar, let it cool, and store in the refrigerator.
