Instructions
- 1
Step 1

To prepare the ketchup, we will need all the above-listed ingredients. In the absence of tomatoes, this ketchup can be made using canned tomato juice; approximately 4 kg of fresh tomatoes equals 3 liters of juice.
- 2
Step 2

Wash the tomatoes. Cut them into pieces and pass through a juicer. This procedure will simplify the preparation of ketchup and make your work and your kitchen cleaner after cooking.
- 3
Step 3

Peel the onion and bell pepper. Cut them into pieces. These vegetables will soften during cooking, and we will also blend them with a blender afterward. Therefore, there's no need to chop them too finely or cut the pieces too neatly.
- 4
Step 4

Combine the tomato mixture (thick tomato juice) with the chopped vegetables. Place over heat and cook for 1 hour, stirring occasionally.
- 5
Step 5

When the mixture begins to boil, add spices, salt, and sugar. Cook until the mixture thickens (the volume should reduce by 50 percent).
- 6
Step 6

At the very end, add the vinegar. You can squeeze in garlic. Remove the mixture from the heat and puree it with an immersion blender until smooth.
- 7
Step 7

Pour the ready-made ketchup into sterile jars and seal with lids. This ketchup can be stored in a dark place or in a cellar.
- 8
Step 8

Serve with meat dishes, meat products, fish, and vegetables.
