Description

Prepare all the ingredients.

Slice the red onion, celery, chili pepper, ginger, and garlic into small pieces. Transfer the prepared vegetables to a saucepan, add the basil stems, crushed coriander seeds, and cloves. Season with ground pepper and a pinch of salt. Sauté the vegetables over low heat until soft, about 10–15 minutes, stirring occasionally.

Add the chopped tomatoes and tomatoes in their own juice. Pour in 170 ml of water. Bring to a boil and simmer over low heat until the sauce reduces by half.

Add fresh basil leaves.

Using an immersion blender, blend the mixture until smooth.

Then strain through a sieve twice.

Pour the sauce back into the saucepan, add vinegar and brown sugar. Simmer over low heat until it reaches the consistency of ketchup.

Pour the hot sauce into clean sterilized jars or bottles.
