    Chop the onion and slice the garlic cloves into thin rounds. Grate the ginger. Heat the oil in a saucepan. Sauté the onion, then add the garlic and ginger.

    Then, in a mortar, combine the cloves with coriander and fennel. Grind the ingredients. Add them to the saucepan together with the chopped chili and pepper.

    Peel the tomatoes and cut them into large pieces. Transfer them to a saucepan.

    Also peel the tomatoes in their own juice. Cut them in half. Add them to the saucepan together with the juice from the can. Simmer the dish for 20 minutes. Then add sugar and salt. Pour in the vinegar.
