
Turkey Quesadilla

Perfect for the table and with drinks. Turkey quesadilla is a traditional Mexican dish that is usually served with spicy guacamole sauce. In general, Mexican dishes are very spicy, so the quesadilla whose recipe I described should appeal to those who like a bit of heat. Everything is very easy to prepare, but it can be served not only as an appetizer, but also as a main course. I hope my recipe will be very helpful to those who don't know. It can be served warm or chilled.

First, you need to prepare guacamole sauce, which quesadillas are usually not served without. Place tomatoes, half the cilantro, green onion, chili pepper, and peeled avocado in the blender bowl. Add a little lime juice. Blend until smooth. The sauce is ready.

Add salt and pepper to the sauce to taste. Put the sauce in the refrigerator for 10–15 minutes to cool.

Prepare the filling for our quesadilla. Finely dice the turkey breast and bell pepper, shred the remaining cilantro and green onion, and finely chop the chili pepper. Sprinkle with grated cheddar cheese, season with salt and pepper to taste, and mix well.

Without oil, heat a heavy-bottomed skillet. Form the quesadillas: lay the tortilla flat, place the filling on one half, and fold the other half over it. Cook each quesadilla in the skillet for one and a half minutes per side; by then the cheese will melt and the remaining ingredients will warm through.

Cut each quesadilla into 3–4 pieces and serve with pre-prepared guacamole sauce.
