
Mushroom Quesadilla
Description
The recipe won't take much time. Mushroom quesadilla, as I've already written, is a versatile dish of South American cuisine. To prepare this dish you need two main components — tortillas or small wheat flatbreads and filling. The filling can be absolutely different and unusual. The pizza principle applies here — you can add whatever you want (whatever is in the fridge), but it's important to have cheese. Mushroom quesadilla is the most classic version of this dish, which I prefer to make for breakfast. Good luck. It can be served warm or chilled.

Thoroughly wash the mushrooms. Dry and slice them. Then sauté them in a pan with butter until tender. Set the mushrooms aside.

Beat the eggs with the milk. Cook the omelet in a frying pan. The larger the pan, the better—the omelet should be as thin as possible. Set aside.

Fill the tortillas. Add chopped omelet, mushrooms, and grated cheese. Fold in half and place on an oiled skillet. Fry the quesadilla over medium-low heat on both sides until golden brown. Work fairly quickly and carefully—the tortilla can burn easily.

During frying, the cheese should melt thoroughly and the quesadilla filling should set, but flipping the tortilla is very difficult—everything may start falling out.
