To make quesadillas, we will need this kind of pita. In retail, they come in different shapes: large (18–20 cm) and small (10–12 cm). Any size will do. The size of the pita only affects how many quesadillas are prepared for one serving. One large pita can satisfy an adult, while for small ones you will need 3–4 pieces.

Finely chop the fresh tomatoes and cucumbers. It is not about getting some practice in, but about the fact that large pieces of vegetables will stick out of the pita awkwardly and fall out. This creates difficulties when eating the finished dish.

Grate the hard cheese. Chop the herbs and dice the sausage or ham. It is better to use ham. It is juicy.

Place the pita on a dry, hot frying pan. Immediately reduce the heat to minimum. Sprinkle the entire pita with grated cheese. Mentally divide the pita into 2 parts.

Place the chopped vegetables, ham, and herbs on one side of the pita. A pinch of each ingredient. Add salt and pepper.

The thing is, pita bakes quickly and hardens. You need to act fast. We lowered the heat on purpose so nothing would burn. While we were laying out the filling, the cheese began to melt. Fold the pita in half, enclosing the filling inside the pita.

Turn the pita over to the other side and lightly brown it. You can flip the flatbread with your hands.

Serve the quesadilla hot. It should be served immediately so the vegetables do not release juice and the quesadilla does not get soggy. Mexican cuisine is spicy. Quesadillas are often eaten with hot sauce poured over them.
