
Cottage cheese muffins with currants
Description
The recipe won't take much time. You can use either fresh or frozen currants for making these muffins. Prepare a simple batter without eggs, using low-fat kefir. Although, if you'd like, you can add eggs. Check out the recipe. Serve cooled or slightly warm.

Pour kefir and vegetable oil into a bowl, add sour cream, starch, sugar, vanilla sugar, ginger, cinnamon, and salt. Mix until smooth and homogeneous.

Into a bowl with the liquid ingredients, add the flour with baking soda. Without stirring, make a small hole and pour the currants into it.

We knead the dough. The dough should not be liquid nor dense: it should be sticky and slightly greasy in consistency.

We place our dough into the molds lined with cupcake liners, filling them one third full.

Place the cupcakes in a preheated oven at 160-170 degrees and bake until done—until a golden crust forms—about 40-50 minutes.
