
Ricotta Muffins

Prepare the ingredients.

Crack the eggs into a mixing bowl, add the sugar, and beat until fluffy.

Add the ricotta and whisk again.

Add the flour and baking powder, whisk.

Add the zest of one lemon.

Add the juice of 1/3 lemon to the dough; you can add more if desired.

Divide the dough among the molds.

Bake the cupcakes in the oven at 180 degrees for 30–35 minutes.

Cool the dough to room temperature.

At this stage you can already stop, simply dust the muffins with powdered sugar, or you can quickly make a lemon glaze. For this, you will need 50 grams of powdered sugar and a couple of tablespoons of lemon juice.

Pour the lemon juice into the powdered sugar, not the other way around, because this way you can control the desired consistency. Stir until smooth.

Using a pastry brush, apply the lemon glaze to the cupcakes; if desired, sprinkle with colored sugar sprinkles. The cupcakes are ready, as the glaze sets very quickly.
