
Zucchini muffins in the microwave

The recipe won’t take much time. Making zucchini muffins in the microwave is very simple—a quick recipe. Honestly, when I made them for the first time, I didn’t even expect them to be this delicious! The dish is unlike traditional baked goods; it can rather be classified as a snack. Something in between a delicate casserole and airy zucchini fritters. Sour cream is perfect as a serving sauce, and if desired, you can complement the dish with fresh vegetables. From the listed ingredients, I got three pieces, but you can safely increase the ingredients 2–3 times—you won’t regret it. Serve warm or chilled. Perfect with tea.

Prepare all the ingredients.

Grate the zucchini on a coarse grater, add a pinch of salt, stir, and leave for 10 minutes. Then squeeze out the released juice well and transfer to a deep bowl.

Add the egg, starch, crushed garlic, salt, and ground pepper to taste.

Spoon the zucchini mixture into silicone molds, filling them to the top. Place them in the microwave and cook for 8 minutes.
