Using a mixer, beat the eggs with sugar and vanilla until thick and foamy. Beat for 7–10 minutes. Then, while continuing to beat, slowly drizzle in the oil. Using a silicone spatula, gently fold in the flour and cocoa with a bottom-to-top folding motion.

Wash the cherries, remove the pits, and roll them in flour. If using frozen cherries, they must be thawed first.

Preheat the oven to 180°C. Moisten silicone muffin molds with water. Fill the molds with batter up to 2/3 full, and place one cherry in each, using one to three berries per muffin. Bake for 25–30 minutes, or until a toothpick inserted comes out clean.
