Wash the carrot, peel and grate it (finely). Place it into a deep container. Add salt, sugar, flour, and cinnamon. Also add the egg and honey. I add half a teaspoon of cinnamon, but avid fans can double the amount.

Mix all the ingredients thoroughly together. There should be no lumps. Then add oil (vegetable) to the resulting mixture and mix everything again.

Pour kefir into a glass of kefir, then add baking soda. Stir until the kefir starts reacting with the baking soda. Use a larger container, as the liquid will rise significantly.

Add kefir to the previously prepared mixture. Meanwhile, you can preheat the oven. Add the sifted flour to the container with the mixture of ingredients. Add it in portions, constantly stirring. This way, the dough will definitely be lump-free.

As a result, the dough turns out quite thick and sticky.

Now it's time to fill the cupcake molds. Fill them only about two-thirds full. Place the nuts in the center. In principle, you can use other fillings here as well—just choose whatever you prefer. Put the cupcakes in the oven and bake at 200 degrees Celsius for 10 minutes. Then reduce the temperature to 170 degrees and continue baking for another 20–25 minutes.
