
Muffins in silicone molds
Description
The variety of silicone molds will delight all family members, even the little ones. I'm happy with the result—give it a try too. These cupcakes in silicone molds are made from a batter of flour, sour cream, margarine, egg, and sugar. You can add any dried fruits inside. Serve warm or chilled. Perfect with tea.

1. Prepare the ingredients. Vanilla sugar can be replaced with any fruit or vanilla essence.

2. Pour boiling water over the raisins and let them sit for 5–10 minutes.

3. Mash the cottage cheese with a fork together with sour cream and egg, and sugar. You can pass the cottage cheese through a meat grinder beforehand to avoid noticeable large lumps.

4. Add the soft margarine to the dough.

5. Sift the flour, mix it with baking soda, and add to the dough.

6. Add the raisins drained from liquid to the dough; you can also add apricots or prunes, whatever you have on hand. Knead the dough.

7. Take silicone molds. There's no need to grease them—just fill each mold one-third full with dough and place them in a preheated oven. Bake at 200°C (392°F) for 30 minutes, checking for doneness with a toothpick.

8. The finished cupcakes easily come out of silicone molds. Let them cool and serve to your guests! Enjoy!
