
Raisin Muffins
Description
The baking is simple and quick. To make muffins with raisins, mix butter with sugar, then add flour, baking soda, and kefir, and stir. Soak the raisins in boiling water beforehand to let them plump up, then drain and add to the batter. Instead of raisins, you can use other dried fruits—such as dried cherries, for example—or even add chocolate chunks. You can use a large muffin pan, placing special muffin liners into each compartment. Serve cooled or slightly warm.

1. Prepare the ingredients for raisin muffins. I bought small, sweet seedless raisins.

2. Cut the butter into pieces and place in a warm spot to soften.

3. Mix the warm butter with sugar.

4. Another point – you need to soak the raisins in advance. So pour boiling water over them and set aside. Continue working on the cupcake batter.

5. Add kefir, mix well.

6. Add the baking soda mixed with flour, and knead the dough.

7. Make sure there are no lumps in the dough. Add raisins—the more, the tastier; I added extra during the process.

8. Preheat the oven to 200 degrees. Divide the dough into muffin tins. Bake in the oven for 20 minutes.
