
Spring Cake
Description
The recipe won't take much time. This cake is made with yeast. In principle, you can do without them if you're afraid it's difficult. Then simply use kefir instead of water and baking soda instead of yeast. Such dough rises almost as well, and takes much less time. Can be served with tea or coffee.

Pour warm water into a container and dissolve the yeast in it. This time I used compressed yeast. It takes more time, but I prefer the quality of baked goods made with it. Add a pinch of sugar and one-third of the flour portion. Mix everything and place in a warm spot for a couple of hours.

Take out the butter. It should be left in a warm place to soften. Rub the butter with sugar, salt, and vanilla.

Wash the raisins. They need to be soaked for some time. This will make them much cleaner, as dirt usually comes out of the soaked raisins when rinsed. Dry them and add to the butter mixture. Add the candied fruits as well.

Mix the sponge with the butter mixture, to which we have already added raisins and candied fruits. Gradually sift in the remaining flour according to the recipe and knead the dough.

Transfer the dough to a greased and floured pan, and place it in a warm spot. Let it rest and rise there. After one to one and a half hours, bake it in the oven at 180°C (350°F) for 40 minutes. As soon as you see a golden crust on top, take it out and cover the cake with a towel to prevent it from drying out. Serve with tea and hot milk.
