
Capital Cake
Description
The recipe won't take much time. The “Stolichny” cupcake is a fragrant and fluffy pastry with raisins, made with butter. It comes out with a golden crust, a soft, slightly crumbly crumb and a pleasant sweetness. This cupcake pairs perfectly with tea, stays fresh for a long time, and is easy to make from simple ingredients that are always on hand It can be served with tea or coffee.

Lay out all the ingredients on the table in advance. It's best to take the butter out of the fridge about an hour beforehand. So that it becomes soft.

Rinse the raisins, place them in a bowl, and cover with boiling water for 15 minutes.

Place the soft butter, cut into pieces for convenience, into a spacious bowl. Add sugar.

Whisk these ingredients with a mixer until they reach a creamy consistency.

Now add the eggs to the butter mixture one at a time, and continue beating with the mixer.

Sift the flour with baking powder into this mixture. Add vanilla sugar.

Fold in the flour with a spatula, and the result should be a thick, homogeneous, sticky dough.

Drain the water from the raisins, transfer them to a bowl, sprinkle with flour, and mix.

Place the batter into the muffin tin, smoothing it with a spatula. My tin is silicone, so I don’t grease it. Put the filled tin into a preheated oven at 180 °C and bake the cake for about 40–45 minutes.

After it has completely cooled, serve the ready capital cake at the table, sprinkling it with powdered sugar.
