
Capital Cake
Description
Homemade baked goods for tea. The “Stolichny” cake is a fragrant and fluffy pastry with raisins, made with butter. It turns out with a golden crust, a soft, slightly crumbly crumb and a pleasant sweetness. This cake is perfect with tea, stays fresh for a long time and is easy to make from simple ingredients that are always on hand It can be served with tea or coffee.

Lay out all the ingredients on the table in advance. It's better to take the butter out of the refrigerator about an hour beforehand. So that it becomes soft.

Rinse the raisins, place them in a bowl, pour boiling water over them and let stand for 15 minutes.

Place the softened butter, cut into convenient pieces, into a spacious bowl. Add the sugar.

Whisk these ingredients with a mixer until creamy.

Now add the eggs one at a time to the butter mixture, continuing to beat with the mixer.

Sift the flour with baking powder into this mixture. Add vanilla sugar.

Fold in the flour with a spatula, and the result should be a thick, uniform, sticky dough.

Drain the water from the raisins, transfer them to a bowl, sprinkle with flour, and mix.

Add raisins coated in flour to the dough.

Mix it with a spatula until evenly distributed throughout the mass.

Place the batter into a cupcake mold, smoothing it with a spatula. My mold is silicone, so I don’t grease it. Put the filled mold into a pre‑heated oven at 180 °C and bake the cake for about 40–45 minutes.

Place the hot cake on a rack to cool.

After it has fully cooled, serve the finished Stolichny cake at the table, sprinkling it with powdered sugar.
