
Nut and dried fruit cake
Description
Delicious baked treat for the whole family. The cake turns out airy, slightly moist inside. You can prepare it with different dried fruits and nuts, or better yet, use a mix (though you can do without them as well). Before serving, I decorate the finished cake with powdered sugar.

1. Crack the eggs into the mixer bowl and whisk with a whisk attachment until fluffy. Melt the butter in the microwave, then slowly pour it in a thin stream into the beaten eggs.

2. Mix the mixture with a mixer and gradually add vanilla, adding granulated sugar in portions. Turn off the mixer and add baking powder, baking soda, and salt.

3. Add oat flakes to the dough, mix the contents of the bowl with a spoon.

4. Pour in the Coca-Cola in two batches, mix with a spoon.

5. Sift the flour and add it to the bowl in portions, knead the dough.

6. Soak the dried fruits in advance in warm water, then chop them together with the nuts and add to the dough.

7. Line the baking pan with parchment paper, grease it with vegetable oil, pour in the batter, and spread it evenly.

8. Bake the cake in a preheated oven at 180 degrees for about 1 hour, then do not rush to remove it from the mold—let it sit for 20 minutes. Decorate the finished cake with powdered sugar.
