
Cake with dried apricots
Description
The baking is straightforward and fast. Truly delicious homemade cake—perfect not only for a family afternoon tea but for unexpected guests too. The loaf isn’t dry at all: it has a moist crumb, rises well, stays tender and smells wonderful. Apart from dried apricots, you can add raisins or walnuts to the batter—in any case it always turns out superb. It’s a great recipe based on simple, easy-to-find ingredients, and it’s bound to please everyone. It’s ready. Serve at the table.

Prepare all ingredients.

Combine the eggs, sugar, and salt. Beat with a whisk or mixer.

Add kefir and melted butter. Mix.

Add the flour and baking powder. Stir everything once more until smooth and uniform.

Add dried apricots cut into pieces. Soak the dried apricots in warm water for 10 minutes beforehand, then rinse and pat dry.

Stir the dried apricots into the dough using a spoon or spatula.

Transfer the dough to a baking pan greased with oil or butter. I used a silicone pan and didn’t grease it at all. Bake the cake in an oven preheated to 170°C for about 50 minutes.

Check doneness with a wooden toothpick or skewer. Let the finished cake cool slightly, then unmould it.

I poured sugar glaze over the cooled cake and decorated it with sprinkles.
