
Cranberry and candied fruit cake

You can use any candied fruits you like for the cake. I used pineapple and kumquat. It will look very beautiful if the candied fruits are multicolored—yellow, red, green.

Beat soft margarine with sugar, regular and vanilla, for about 3 minutes.

Add the eggs and beat until a smooth mixture is obtained.

Add the semolina and sour cream. Mix well.

Add the flour mixed with baking powder and mix thoroughly.

And the final touch—add the candied fruits and mix until they are evenly distributed throughout the dough.

Grease the loaf pan with butter and lightly dust with flour.

Place the dough in the pan and smooth it out.

And bake in a preheated oven at 180-190 degrees for 1 hour or slightly longer. Check the doneness of the cake with a wooden toothpick.
