
Cranberry Cake
Description
Perfectly pairs with tea and coffee. The cranberry loaf cake I'm sharing with you is very easy to make—much simpler than the majority of other cakes. In fact, you can bake it even when guests drop by unexpectedly for tea and you have nothing to offer. It takes only 10–15 minutes of your time; the rest is spent baking in the oven without any further effort. And there's hardly a better treat than a freshly homemade cranberry loaf cake: the tartness of the berries beautifully complements the sweetness of the sponge, making the flavor nearly perfect. Prepare all the necessary ingredients.

Then, using a mixer or blender, beat the eggs together with sugar, then add butter (at room temperature) and cream. Beat everything again.

Then add the flour and baking soda.

Roll the cranberries in flour.

Add the berries to the dough and VERY carefully mix with a spoon to avoid crushing the berries.

Place parchment paper soaked in butter into the muffin baking pan (if using silicone bakeware, no paper is needed), then pour the batter onto it and smooth it out.

Place the cake in the oven and bake at 190 degrees for 1 hour. Then remove the cake and let it cool in the pan.

Then remove from the mold, transfer to a plate, and serve.
