
Cake with raisins and walnuts

I consider this cake recipe a real winner—this raisin and walnut cake is very easy to make, yet thanks to a harmonious blend of ingredients it develops a rich, distinctive flavor quite unlike traditional crumbly loaf cakes. By the tenth minute of baking, the apartment fills with such heady aromas that everyone at home turns away from televisions and computer screens to peer at the oven window. Pour cognac over the raisins and leave them to soak.

Sift the flour into a small bowl, add salt, baking powder, cloves, and nutmeg.

In another bowl, beat together softened butter and brown sugar until you have a smooth, fluffy mixture.

Continuing to beat with the mixer on medium speed, add the eggs one at a time.

Fold the raisins (without the liquid) into the mixture you have.

Mix the butter mixture and the flour mixture.

Coarsely chop the nuts.

Fold the nuts into the dough as well. Transfer the finished dough to a loaf pan greased with oil.

Bake for 45–50 minutes at 180°C. Let the finished cake cool, dust with powdered sugar (optional), and serve. :)
