Yogurt Cake
Description
The baking is simple and quick. This is a classic yogurt cake that even children can make. You can mix the batter in less than 10 minutes without a mixer—just one bowl and a whisk are needed. This recipe is a real lifesaver, especially since the cake keeps well in an airtight container for several days.
Instructions
- 1
Step 1
Preheat the oven to 175 degrees. Line the bottom of the muffin tin with parchment paper and grease with butter.
- 2
Step 2
In a large bowl, mix together yogurt, olive oil, sugar, eggs, and vanilla extract.
- 3
Step 3
Add the sifted flour, baking powder, salt, nutmeg, lemon zest, and mix well until there are no air bubbles left in the dough.
- 4
Step 4
Pour the batter into the prepared pan and bake the cake for 50-60 minutes. If the top turns golden brown quickly, cover the cake with a sheet of foil at the end of baking.
- 5
Step 5
Check the cake in the center by inserting a sharp, thin knife. If the cake is done, the knife will come out clean and hot; if it's not ready yet, there will be traces of batter on the knife.
- 6
Step 6
Let the finished cake cool in the pan for 10 minutes, then transfer it to a wire rack on the table.
- 7
Step 7
Serve the cake warm or completely cooled.
