
Persimmon Cake
Description
Delicious baked goods for the whole family. The cake made according to this recipe turns out moist and at the same time very tender, slightly crumbly. Its amazing aroma and unique taste will not leave you indifferent. For a more piquant flavor, we’ll add a hint of mandarin. If you’re a fan of cinnamon, feel free to add some as well. Prepare all the ingredients. Soften the butter in advance at room temperature.

Cream the softened butter with sugar and vanilla.

Add the eggs one at a time, beating the mixture each time until smooth.

Now add persimmon puree. For this I cut the persimmon in half and grate it; the skin that remains in your hands is not needed. Use only the flesh. If the persimmon turned out very juicy, it's better to drain some of the juice beforehand.

Stir, add the leavening agent and gradually incorporate the flour, stirring the dough with a spoon each time.

At the end, add mandarin wedges cut in half.

Stir everything once more. The dough should be fairly thick and sticky.

Transfer the dough into a butter‑greased and flour‑dusted baking pan.

Bake the cake at 180 degrees for about an hour. You can test doneness with a wooden skewer. Let the baked good cool a bit, then carefully remove it from the pan and transfer it to a plate.
