
Avocado and Nut Cake
Description
The recipe won't take much time. I use avocado instead of banana. The cake will be not very sweet but moist. You can use walnuts or other nuts. Chop them into different-sized pieces for a more interesting texture. The original recipe calls for nut butter, but the cake will turn out well with any vegetable oil. Serve with tea or coffee.

1. Cut the avocado in half, remove the pit, peel off the skin, and mash it into a puree.

2. In another bowl, add sugar, eggs, vegetable oil, lemon juice, zest of one lemon, avocado puree, and mix well.

3. In a separate bowl, combine flour, baking soda, salt, and baking powder. Mix the contents of the two bowls together and stir.

4. Chop the nuts into small pieces, add them to the dough and mix.

5. Place the dough into baking pans (you can use several small ones or one large). Decorate with nuts.

6. Bake the cupcakes in a preheated oven at 180 degrees for 30-35 minutes, or if using a larger pan, bake for about 1 hour. Serve the cake after it has cooled down.
