
Quince Cake
Description
Homemade pastry for tea. The recipe is simple to prepare, but attention should be paid to sautéing the quince. It should be done carefully, the sugar can caramelize into lumps, so use a pan with a thick bottom and moderate heating temperature. Serve cooled or slightly warm.

Prepare the necessary ingredients.

Place 100 g of softened butter, 3 tbsp sugar, honey, and orange zest into a bowl. Beat with a mixer until smooth.

Add one egg at a time to the butter mixture. After each, beat with a mixer.

Add flour, starch, baking powder.

Beat the dough with a mixer into a fluffy mass. Set aside.

Peel the quince, remove the seed core. Slice into thin pieces.

In a pan, melt 3 tbsp of sugar.

Add sliced quince, 50 g of butter, and stir quickly. Keep on medium heat for 4–5 minutes, stirring.

Place the fried quince into the dough.

Mix gently with a spatula.

Generously grease the baking pan with butter or line it with parchment paper. Pour the batter into it. Using a spatula, make a deep groove in the middle of the batter. Place the pan with the batter in a preheated oven at 180 °C for 25 minutes, then lower the temperature to 160 °C and bake for another 15 minutes.

After the time is up, remove the baked cake from the oven. Let it cool a bit in the pan.

Transfer to a board or plate. If you baked in parchment, it's better to remove it when the cake has cooled. Cool the baked good well, and preferably let the cake “mature” for a day. This is desirable, but not required.
