
Yogurt cake
Description
The recipe won’t take much time. You can bake a yogurt cake with berries using any berries—fresh or frozen. You can also use a mixed berry blend. Do try making this cake from my recipe and treat your family to some delicious baking.

Prepare the ingredients according to the recipe list. The recipe uses a mixture of blueberries and black currants.

Separate the whites and yolks of 4 eggs into separate bowls.

Add the egg yolks to the yogurt; add vegetable oil, sugar, and vanilla sugar to the same mixture. Mix until smooth and the sugar has dissolved.

Mix the above ingredients until smooth and the sugar dissolves.

Beat the egg whites with a pinch of salt until they hold stiff, fluffy peaks.

Mix the flour with the baking powder.

Gradually fold the flour mixture into the egg yolk mixture. You can mix with a silicone spatula or with a mixer. With a mixer, don’t mix for long—no more than 1 minute—only until the ingredients are combined.

Fold the beaten egg whites into the dough in several additions.

Add a pinch of flour to the berries; if using frozen berries, you do not need to thaw them.

Toss the berries with flour so that when you fold them into the batter they don’t sink to the bottom of the pan but spread evenly through the batter.

Add the berries to the batter and fold them in gently.

Preheat the oven to 180°C on upper and lower heat (top and bottom). Prepare the baking tin: grease with butter and dust with flour. Shake off any excess flour. The recipe uses a tin 23 cm in diameter and 10 cm high.

Put the dough in the pan and level it. Bake at 180 degrees for 50–60 minutes; test doneness with a wooden skewer.

Remove the finished cake from the mould and cool on a rack. You can serve the cake as it is or dust with icing sugar. But I suggest making a berry glaze from blackcurrants.

Pour 100 grams of currants into a saucepan or sauté pan; if the berries are frozen, you do not need to thaw them. Heat the berries over medium heat until tender.

Mash the berries into a puree with a spoon.

Rub the berries through a sieve.

After passing the berries through a sieve, there was 60 grams of puree. Take powdered sugar in a 1 to 2 ratio, i.e. 120 grams.

Mix currant purée with confectioners’ sugar and spread the berry glaze over the cooled cake.
