
Orange Juice Cake

Prepare all the ingredients.

Remove the zest from the oranges and squeeze the juice, we will need 150 ml. A little zest can be saved for garnish.

Whisk the egg whites with a pinch of salt until a white foam appears, then add 1 tbsp of sugar (of the total amount) and whisk again until stiff peaks form.

Beat the yolks with the remaining sugar and vanilla.

Add the zest and 75 ml of juice from the total amount.

Stir. Add 150 grams of flour and baking powder.

Whisk and add 50 ml of butter.

Whisk everything again and add the remaining juice and the remaining oil.

Beat the batter until smooth and fold in the beaten egg whites in two additions.

Stir the dough with a spatula using smooth motions from top to bottom.

Grease the baking pan with butter, dust the bottom and sides with flour or semolina, and pour in the batter. Bake in the oven at 180 °C for about 40 minutes.
