
Travel Cake
Description
The recipe won't take much time. This French cake (Gâteau de voyage) is very easy to prepare, but what sets it apart from most cakes is that it must be soaked with syrup after baking—this is the key. The cake becomes moist and stays fresh for a long time. Be sure to make it—you'll be delighted. But be careful—the bright citrus aroma of this treat will attract not only your family members but also your neighbors :) Serve warm or chilled. Perfect with tea.

1. The loaf is calculated for a pan measuring approximately 30 by 11 cm. I didn't have one of that size, so I baked it in two bread loaf pans. Line the pan with parchment paper, letting the edges hang over the sides so you can easily lift the loaf out of the pan later.

2. Crack the eggs into a bowl (weight is very important, so I'm not specifying the exact number of eggs!!!), add salt and 200 grams of sugar. Beat for about 4-5 minutes until the mixture lightens, thickens, and increases in volume.

3. Add the flour mixed with baking powder to the egg mixture and mix at low speed with a mixer until smooth.

4. Add the melted but not hot butter, 30 ml of lemon juice, and lemon zest. Mix until smooth.

5. Add the candied fruits. I used pineapple, but orange or lemon would work well too.

6. Pour the batter into a baking form. Bake in a preheated oven at 145-150 degrees Celsius for about 50-65 minutes, until a toothpick inserted comes out dry.

7. While the cake is baking, prepare the syrup. Bring water, lemon juice, and sugar to a boil. You can add rum or brandy :) The syrup should still be hot, about 70°C, when needed.

8. The cake is ready, remove it from the mold and peel off the paper. It is quite fragile, so handle with care.

9. It is recommended to pour the syrup into a slightly larger mold, place the cake into the syrup, then after a minute turn it to one side, and after another minute turn it to the other side. I placed the cakes back into the mold and poured the syrup over them. Let the cake soak for several hours.
