
Kefir cake in a multicooker
Description
Kefir is a highly valuable food product, and it's no wonder that the long-living populations of the Caucasus region guarded their special kefir-making recipes as family secrets. A cake made with kefir can be considered the quickest baking method. Kefir-based dough is very similar to biscuit dough and is quick and easy to prepare. Serve it cooled or slightly warm.

Pour kefir over the semolina, mix and let it swell. You can use practically any kefir for the dough, depending on the final result you wish to achieve.

Separate the eggs into whites and yolks. Set the yolks aside for beating, and put the whites in the refrigerator.

Combine the cottage cheese, 5 egg yolks, sugar, salt, vanilla sugar, and baking powder—mix with a mixer, then add the semolina with kefir.

Take the egg whites out of the refrigerator, beat them until stiff peaks form, then gently fold them into the cottage cheese mixture with a spoon (mixing from the bottom up). Remember, to get a good cream, transfer the egg whites into a completely cold bowl.

Grease the bottom of the multicooker pot with oil, sprinkle with semolina, and carefully place the dough on it. Bake for 50 minutes on the "Baking" setting (for larger multicookers, it is recommended to increase the baking time to 60 minutes), then keep on "Warm" setting for 10 minutes, and let it sit in the multicooker for another 10 minutes (do not open the lid).

Let the finished cake cool in the multicooker. Carefully run a spatula around the edges of the cake to separate it from the sides of the pot, then gently remove the cake. When serving, you can dust the cake with powdered sugar, but it's not necessary—either way, it will be delicious. The result is a delicate cake with a texture similar to cottage cheese soufflé, not overly sweet.
