
Homemade kefir
Description
The drink is quick and easy to prepare. You can make kefir at home in three ways. Ferment milk using kefir grains. Prepare kefir using dry starter culture. And finally, the easiest method—use ready-made kefir. I don't have kefir grains, so I'll tell you about the last two methods. If you're using a starter culture, one 3 g packet is enough for 1 liter of milk. You can buy the starter culture in the dairy sections of large supermarkets. If you're using ready-made kefir, you'll need 800 ml of milk and 200 ml of kefir for 1 liter of kefir.

To prepare 1 liter of kefir, you will need milk and either dry starter culture or ready-made kefir. Please note—either one or the other!

Thoroughly mix room-temperature milk with dry starter culture. If you are using dry starter, your task is to carefully dissolve the powder in the milk. Use a whisk or even a mixer at low speed. If you are using ready-made kefir as a starter, simply mix it well with the milk.

Next, you need to provide favorable conditions for the future kefir to ferment. You can warm the mixture and pour it into a thermos, or wrap it in a warm blanket, as our grandmothers used to do. But the easiest way to get excellent kefir without any hassle is to use a multicooker with the "Yogurt" setting! Simply pour the milk mixture into the multicooker bowl, set the cooking time from 6 to 8 hours—depending on how strong you like your kefir.

After the specified time has elapsed, the kefir—thick and delicious—will be ready!

Pour it into a dry, clean container and chill – in my opinion, cold kefir is much tastier! And everyone can decide for themselves what to serve it with!
