Bulgarian-style kebabceta

Description

Meat sausages are grilled on a barbecue, grill, electric grill, or grill pan to achieve characteristic grill marks. It's best to use a mixture of lamb and beef mince, but remember that it must include some fat, otherwise the dish will turn out dry. Kebabcheta are best served paired with a glass or goblet of red table wine.

    Prepare the listed ingredients. Prepare the minced meat in advance from cleaned meat of both types using a meat grinder. If lamb is insufficient, use pork.

    Grate the peeled and washed onion and garlic cloves on a fine grater into a container with the minced meat.

    Add spices, herbs, and salt to the container. Knead the meat mixture thoroughly for 10 minutes, then place it in the refrigerator for 30 minutes. Afterward, take it out and knead again thoroughly, grabbing the mixture with your hands and throwing it back into the container to remove air. This step is essential—knead almost until white threads appear—so that the meat binds well and doesn't fall apart during frying.

    Form small sausage-shaped portions from the minced meat.

    Thoroughly heat a grill pan with vegetable oil and place the prepared items on it. Fry for 2-3 minutes, turning occasionally.
