
Kebab in parchment
Description
The dish is prepared without unnecessary complications. Kebab in parchment paper is a very tasty, juicy, and aromatic dish of Turkish cuisine. It is usually made in individual portions, wrapping the filling for each person into a small parchment paper packet. However, if you're short on time, you can prepare a family-sized paper kebab in one large parchment paper envelope. You can cook paper kebab in two ways: a simple method (my version) and a more complex one, where all the vegetables and meat are pre-fried. In this recipe, I have explained to you how to make it. The ready dish can be served immediately.

Cut the meat into small pieces and add salt, pepper, and olive oil. Mix well.

Add the potato and carrot, cut into small pieces, to the meat. Then add the peas, finely chopped shallot, and tomato paste.

Add tomato juice or tomatoes ground through a meat grinder to the same mixture. You can use homemade tomato juice.

Mix well.

Line the baking sheet with parchment paper, leaving an overhang, and place the filling, spreading it evenly across the entire perimeter of the pan.

Cover the filling completely with parchment paper and carefully wrap it tightly on all sides. Place in a preheated oven at 200 degrees for 40-45 minutes.
