
Kazylyk
Description
The appetizer is quick and easy to make. Kazyluk is a popular meat dish from Central Asia. It is made from horse meat. This sausage can be boiled or fried, and also smoked and dried. Despite its distinctive smell, kazyluk is very tasty, and with onion it is simply wonderful! To make kazyluk you will need horse meat and horse fat. The appetizer is ready. Serve at once.

Step 1

Prepare the meat and the casings. First, marinate the horse meat: cut the meat and fat into strips 3–4 cm thick and 8–10 cm long. Salt and pepper to taste, add zira and coriander, place in a dish (porcelain is best), cover with a damp cloth (cheesecloth works too), and let marinate for at least 4–5 hours, or ideally for 24 hours.

The intestines need to be washed thoroughly. First, rinse them 3–4 times in cold water (and from both sides—the intestines should be turned inside out). Then rub them thoroughly with salt and rinse in hot water. Tie one end tightly with string. Stuff the intestine tightly with horse meat.

Tie the sausage on the other end the same way. I boil kazylyk. Before boiling, pierce it in several places with a toothpick so the sausage does not burst. Boil in cold water for an hour and a half, or up to two.

Kazylyk can also be baked, smoked, or fried. But I prefer to boil it first, and then you can fry it too.

You can serve the finished kazylyk with scallions and fresh herbs.
