The recipe won't take much time. And here is the step-by-step recipe for making horse sausage! 1. It's best to use fresh meat. You'll need horse meat with fatty layers. Meat from the ribs is usually used. Rinse the meat and pat it dry with paper towels, then let it air-dry naturally for a couple of minutes. Cut the meat and fat into thin slices or pieces. It's important to leave fairly large pieces. Mix the pieces together and sprinkle with spices. Let the meat marinate for 24 hours. 2. Now take a clean casing and, using a special stuffer or by hand, fill it with the meat. I tie off one end first, then the other. Pack it as tightly as possible so the sausage turns out firm. But be careful not to tear the casing. 3. Now the sausage can be smoked or pan-fried. Or you can air-dry it slightly before eating.
