Description
This short type of pasta comes from the word meaning "to poke." With the already cut pieces, we'll use our fingers to make little holes. If you've never made this kind of pasta by hand before, it might be a bit difficult for you, since the process is time-consuming. Although the actions themselves aren't as complicated as they might seem.

Sift the flour with salt onto the table. Make a hole in the center and pour the water into it.

Knead an elastic and soft dough, adding flour as needed. Knead the mixture well until smooth and uniform.

Shape the dough into a ball. Wrap it in plastic wrap and refrigerate for 30 minutes. Then divide it into 4 parts.

Roll out each portion into a not-too-thick flatbread. Cut them into strips about one centimeter thick.

Then cut each strip into 2-millimeter pieces.

Place your index finger on each piece and roll it forward. This will give the pasta the desired shape. Now, make a longitudinal indentation in each tube using your fingernail.
